Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups water
  • 1 onion, peeled and halved
  • 2 inches fresh ginger, sliced
  • 2 cloves garlic, smashed
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 8 oz mien noodles
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, bring the water to a boil. Add the chicken pieces, onion, ginger, and garlic. Reduce heat to low and simmer for 45 minutes.
  2. Remove the chicken from the pot and shred the meat. Discard the bones and skin.
  3. Add fish sauce and salt to the broth. Taste and adjust seasoning if needed.
  4. Cook the mien noodles according to the package instructions.
  5. To serve, divide the cooked noodles into bowls. Top with shredded chicken, green onions, and cilantro. Ladle the hot broth over the noodles and chicken. Serve with lime wedges.
