Milkfish Tamarind Soup (sinigang Na Bangus)

Ingredients
- 2 lbs milkfish, cleaned and cut into serving pieces
- 8 cups water
- 1 large tomato, quartered
- 1 medium onion, quartered
- 2-3 pieces long green peppers
- 2 cups radish, sliced
- 1 cup string beans, cut into 2-inch lengths
- 1 cup kangkong (water spinach) or spinach
- 2-3 tablespoons fish sauce
- 1 packet (about 40g) tamarind soup base mix
- Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil.
- Add the tomatoes, onions, and long green peppers. Simmer for 5 minutes.
- Add the milkfish and simmer for another 5 minutes.
- Add the radish and cook for 3 minutes.
- Stir in the tamarind soup base mix and fish sauce. Simmer for 3 minutes.
- Add the string beans and cook for 2 minutes.
- Finally, add the kangkong or spinach and season with salt and pepper. Simmer for another 2 minutes.
- Adjust the seasoning if needed. Serve hot with steamed rice.
