Milkfish Tamarind Soup (sinigang Na Bangus)

Ingredients

  • 2 lbs milkfish, cleaned and cut into serving pieces
  • 8 cups water
  • 1 large tomato, quartered
  • 1 medium onion, quartered
  • 2-3 pieces long green peppers
  • 2 cups radish, sliced
  • 1 cup string beans, cut into 2-inch lengths
  • 1 cup kangkong (water spinach) or spinach
  • 2-3 tablespoons fish sauce
  • 1 packet (about 40g) tamarind soup base mix
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water to a boil.
  2. Add the tomatoes, onions, and long green peppers. Simmer for 5 minutes.
  3. Add the milkfish and simmer for another 5 minutes.
  4. Add the radish and cook for 3 minutes.
  5. Stir in the tamarind soup base mix and fish sauce. Simmer for 3 minutes.
  6. Add the string beans and cook for 2 minutes.
  7. Finally, add the kangkong or spinach and season with salt and pepper. Simmer for another 2 minutes.
  8. Adjust the seasoning if needed. Serve hot with steamed rice.
