Ingredients
- 1 cup millet
- 2 cups water
- 1 red bell pepper, diced

- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the millet under cold water and drain.
- In a pot, bring 2 cups of water to a boil and add the millet. Reduce heat, cover, and simmer for 15 minutes or until the millet is tender.
- While the millet is cooking, prepare the vegetables and parsley in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Once the millet is cooked, let it cool for a few minutes, then add it to the bowl of vegetables.
- Pour the dressing over the salad and toss gently to combine.
- Adjust seasoning if needed and serve the salad at room temperature or chilled.
