Millet and Vegetable Salad (Salade de Millet et de Légumes)

Ingredients

  • 1 cup millet
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the millet under cold water and drain.
  2. In a pot, bring 2 cups of water to a boil and add the millet. Reduce heat, cover, and simmer for 15 minutes or until the millet is tender.
  3. While the millet is cooking, prepare the vegetables and parsley in a large bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  5. Once the millet is cooked, let it cool for a few minutes, then add it to the bowl of vegetables.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Adjust seasoning if needed and serve the salad at room temperature or chilled.
