Millet and Vegetable Stir-Fry (Sauté de Légumes au Millet)

Ingredients

  • 1 cup millet
  • 2 cups water
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 carrots, julienned
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup green beans, trimmed
  • Salt and pepper to taste

Instructions

  1. Rinse the millet under cold water and drain.
  2. In a pot, bring 2 cups of water to a boil. Add the millet, cover, and simmer for 15-20 minutes until the water is absorbed and the millet is tender.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic, and sauté until fragrant.
  4. Add the carrots, bell pepper, zucchini, and green beans to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. Season the stir-fry with salt and pepper to taste.
  6. Serve the sautéed vegetables over the cooked millet and enjoy!
