Millet and Vegetable Stir-Fry (Sauté de Légumes au Millet)
Sauté de Légumes au Millet, or Millet and Vegetable Stir-Fry, is a popular dish in Burkinabé cuisine. This flavorful and nutritious stir-fry is a great way to enjoy a variety of fresh vegetables and millet, a staple grain in Burkina Faso.
Ingredients
- 1 cup millet
- 2 cups water
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 carrots, julienned
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup green beans, trimmed
- Salt and pepper to taste
Instructions
- Rinse the millet under cold water and drain.
- In a pot, bring 2 cups of water to a boil. Add the millet, cover, and simmer for 15-20 minutes until the water is absorbed and the millet is tender.
- Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic, and sauté until fragrant.
- Add the carrots, bell pepper, zucchini, and green beans to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Season the stir-fry with salt and pepper to taste.
- Serve the sautéed vegetables over the cooked millet and enjoy!
