Ingredients
- 6 hard-boiled eggs, peeled and halved lengthwise
- 1 ripe avocado, peeled and pitted
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Paprika for garnish
Instructions
- In a bowl, scoop out the yolks from the halved eggs and place them in a separate bowl.
- Add the avocado, mayonnaise, Dijon mustard, and lemon juice to the bowl with the egg yolks.
- Mash and mix the ingredients together until smooth. Season with salt and pepper to taste.
- Spoon the avocado mixture into the hollowed-out egg whites.
