Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (14 oz) cannellini beans, drained and rinsed
- 1 cup small pasta (such as ditalini or small shells)
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the diced carrots, celery, zucchini, and green beans to the pot. Cook for a few minutes until the vegetables start to soften.
- Pour in the diced tomatoes and vegetable broth. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Add the cannellini beans and pasta to the pot. Continue to simmer until the pasta is al dente, about 10-12 minutes.
- Season the soup with salt and pepper to taste.
- Serve the Minestrone Genovese hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
