Ingredients

  • 1 onion, chopped

  • 2 carrots, diced

  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (14 oz) cannellini beans, drained and rinsed
  • 1 cup small pasta (such as ditalini or small shells)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the diced carrots, celery, zucchini, and green beans to the pot. Cook for a few minutes until the vegetables start to soften.
  3. Pour in the diced tomatoes and vegetable broth. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Add the cannellini beans and pasta to the pot. Continue to simmer until the pasta is al dente, about 10-12 minutes.
  5. Season the soup with salt and pepper to taste.
  6. Serve the Minestrone Genovese hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
