Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 zucchini, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup small pasta (such as ditalini or elbow)
- 2 teaspoons dried Italian herbs
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat some olive oil over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the garlic, zucchini, and green beans. Cook for another 3-4 minutes.
- Stir in the diced tomatoes, vegetable broth, kidney beans, and Italian herbs. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the pasta and continue to simmer for 10-12 minutes, or until the pasta is al dente.
- Season the minestrone with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese if desired.
