Ingredients

  • 1 cup green beans, cut into 1-inch pieces
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup small pasta (such as ditalini or elbow)
  • 2 teaspoons dried Italian herbs
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Add the garlic, zucchini, and green beans. Cook for another 3-4 minutes.
  3. Stir in the diced tomatoes, vegetable broth, kidney beans, and Italian herbs. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Add the pasta and continue to simmer for 10-12 minutes, or until the pasta is al dente.
  5. Season the minestrone with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese if desired.
