Minorcan-style Lobster Bisque (Bisque de Langosta al Estilo Menorquín)
Bisque de Langosta al Estilo Menorquín, or Minorcan-style Lobster Bisque, is a rich and flavorful soup that originates from the Spanish island of Menorca. This luxurious dish is perfect for special occasions or as a comforting meal on a chilly day.
Ingredients
- 2 live lobsters, about 1 1/2 pounds each
- 4 tablespoons unsalted butter
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1/4 cup tomato paste
- 1/4 cup all-purpose flour
- 1 cup dry white wine
- 6 cups fish stock
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Fill a large pot with water and bring it to a boil. Add the live lobsters and cook for about 8 minutes. Remove the lobsters from the pot and let them cool.
- Once the lobsters are cool enough to handle, remove the meat from the shells. Chop the meat into bite-sized pieces and set aside. Reserve the shells.
- In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 10 minutes.
- Add the tomato paste and flour to the pot, stirring to combine. Cook for 2 minutes.
- Slowly pour in the white wine, scraping up any browned bits from the bottom of the pot. Cook for 2 minutes.
- Add the fish stock and the reserved lobster shells to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.
- Strain the soup through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids.
- Return the soup to the pot and add the chopped lobster meat. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes until the lobster is heated through.
- Serve the bisque hot, garnished with fresh herbs if desired.
