Minorcan-style Lobster Bisque (Bisque de Langosta al Estilo Menorquín)

Ingredients

  • 2 live lobsters, about 1 1/2 pounds each
  • 4 tablespoons unsalted butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 1 cup dry white wine
  • 6 cups fish stock
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with water and bring it to a boil. Add the live lobsters and cook for about 8 minutes. Remove the lobsters from the pot and let them cool.
  2. Once the lobsters are cool enough to handle, remove the meat from the shells. Chop the meat into bite-sized pieces and set aside. Reserve the shells.
  3. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 10 minutes.
  4. Add the tomato paste and flour to the pot, stirring to combine. Cook for 2 minutes.
  5. Slowly pour in the white wine, scraping up any browned bits from the bottom of the pot. Cook for 2 minutes.
  6. Add the fish stock and the reserved lobster shells to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes.
  7. Strain the soup through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible. Discard the solids.
  8. Return the soup to the pot and add the chopped lobster meat. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes until the lobster is heated through.
  9. Serve the bisque hot, garnished with fresh herbs if desired.
