Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/2 cup cooked ham, diced
  • 1/4 cup green peas
  • 1/4 cup grated Manchego cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. Cook the rice according to package instructions and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the diced tomato, cooked ham, and green peas to the skillet. Cook for 5 minutes.
  5. Remove the skillet from the heat and stir in the cooked rice, grated Manchego cheese, and chopped parsley. Season with salt and pepper.
  6. Preheat the oven to 375°F (190°C).
  7. Stuff the bell peppers with the rice mixture and place them in a baking dish.
  8. Bake for 30-35 minutes, or until the peppers are tender and slightly charred.
  9. Serve the stuffed peppers hot, garnished with additional parsley if desired.
