Ingredients
- 4 large bell peppers
- 1 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/2 cup cooked ham, diced
- 1/4 cup green peas
- 1/4 cup grated Manchego cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Cook the rice according to package instructions and set aside.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the diced tomato, cooked ham, and green peas to the skillet. Cook for 5 minutes.
- Remove the skillet from the heat and stir in the cooked rice, grated Manchego cheese, and chopped parsley. Season with salt and pepper.
- Preheat the oven to 375°F (190°C).
- Stuff the bell peppers with the rice mixture and place them in a baking dish.
- Bake for 30-35 minutes, or until the peppers are tender and slightly charred.
- Serve the stuffed peppers hot, garnished with additional parsley if desired.
