Ingredients
- 4 large cucumbers
- 1 pound ground pork
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- 1/4 cup grated Manchego cheese
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the cucumbers in half lengthwise and scoop out the seeds to create a hollow center.
- In a skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper, and cook until softened.
- Add the ground pork to the skillet and cook until browned. Season with paprika, cumin, salt, and pepper.
- Remove the skillet from the heat and stir in the breadcrumbs and grated Manchego cheese.
- Stuff the hollowed-out cucumbers with the pork mixture and place them in a baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the cucumbers are tender and the filling is cooked through.
- Garnish with fresh parsley before serving.
