Ingredients

  • 4 large cucumbers
  • 1 pound ground pork
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Manchego cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the cucumbers in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper, and cook until softened.
  4. Add the ground pork to the skillet and cook until browned. Season with paprika, cumin, salt, and pepper.
  5. Remove the skillet from the heat and stir in the breadcrumbs and grated Manchego cheese.
  6. Stuff the hollowed-out cucumbers with the pork mixture and place them in a baking dish.
  7. Bake in the preheated oven for 20-25 minutes, or until the cucumbers are tender and the filling is cooked through.
  8. Garnish with fresh parsley before serving.
