Ingredients
- 4 large potatoes
- 1/2 pound ground beef
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup frozen peas
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- Boil the potatoes in salted water until tender. Let them cool, then peel and mash them.
- In a skillet, cook the ground beef, onion, and garlic until the meat is browned and the onions are soft. Add the peas, paprika, cumin, salt, and pepper. Cook for a few more minutes, then remove from heat and let it cool.
- Take a portion of the mashed potatoes and flatten it in your hand. Place a spoonful of the meat mixture in the center and shape the potato around the filling, forming a ball.
- Dip the stuffed potato in the beaten eggs, then coat it with breadcrumbs, making sure it's fully covered.
- Heat the vegetable oil in a pan and fry the papas rellenas until golden brown on all sides. Remove and drain on paper towels.
