Ingredients
- 12 fresh squash blossoms
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- Gently rinse the squash blossoms and remove the stamens from inside. Pat dry with paper towels.
- In a bowl, mix together the ricotta, Parmesan, garlic, basil, salt, and pepper. Carefully fill each blossom with the cheese mixture.
- Prepare three shallow dishes with flour, beaten eggs, and breadcrumbs. Dredge each filled blossom in the flour, then dip in the eggs, and finally coat with breadcrumbs.
- In a large skillet, heat vegetable oil over medium-high heat. Fry the blossoms until golden brown, about 2-3 minutes per side. Drain on paper towels.
