Ingredients

  • 4 large ripe tomatoes
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 250g ground beef
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 50g breadcrumbs
  • 50g grated Manchego cheese
  • Fresh parsley for garnish

Instructions

  1. Cut the tops off the tomatoes and carefully scoop out the pulp and seeds. Set aside.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the paprika, cumin, salt, and pepper. Cook for an additional 2-3 minutes.
  5. Remove the skillet from the heat and stir in the breadcrumbs and grated Manchego cheese.
  6. Preheat the oven to 180°C (350°F).
  7. Stuff the hollowed-out tomatoes with the meat mixture and place them in a baking dish.
  8. Bake for 20-25 minutes, until the tomatoes are tender and the filling is golden brown.
  9. Remove from the oven and garnish with fresh parsley before serving.
