Calabacín Relleno al Estilo Menorquín, or Minorcan-style Stuffed Zucchini, is a traditional dish from the Spanish island of Menorca. This dish features zucchini stuffed with a flavorful mixture of ground meat, vegetables, and spices, creating a delicious and hearty meal.
Ingredients
- 4 medium zucchinis
- 1 pound ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tomato, diced
- 1/2 cup breadcrumbs
- 1/4 cup grated Manchego cheese
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell about 1/4 inch thick. Chop the zucchini flesh and set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion, garlic, and red bell pepper, and cook until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the chopped zucchini flesh, tomato, paprika, oregano, breadcrumbs, and half of the grated Manchego cheese. Season with salt and pepper.
- Fill the hollowed-out zucchini shells with the meat mixture and place them in a baking dish.
- Sprinkle the remaining grated Manchego cheese on top of the stuffed zucchinis.
- Bake in the preheated oven for 30-35 minutes, or until the zucchinis are tender and the filling is golden brown.
- Serve the Calabacín Relleno al Estilo Menorquín hot, garnished with fresh herbs if desired.
