Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tomato, diced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Manchego cheese
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a shell about 1/4 inch thick. Chop the zucchini flesh and set aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion, garlic, and red bell pepper, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in the chopped zucchini flesh, tomato, paprika, oregano, breadcrumbs, and half of the grated Manchego cheese. Season with salt and pepper.
  6. Fill the hollowed-out zucchini shells with the meat mixture and place them in a baking dish.
  7. Sprinkle the remaining grated Manchego cheese on top of the stuffed zucchinis.
  8. Bake in the preheated oven for 30-35 minutes, or until the zucchinis are tender and the filling is golden brown.
  9. Serve the Calabacín Relleno al Estilo Menorquín hot, garnished with fresh herbs if desired.
