Ingredients

  • 2 bolondo plantains, peeled and sliced
  • 1 cup black beans, cooked
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 4 cups vegetable broth
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions, garlic, and red bell pepper. Sauté until the vegetables are soft.
  3. Stir in the paprika, cumin, and salt. Cook for another 2 minutes.
  4. Add the tomatoes, bolondo plantains, and black beans. Stir to combine.
  5. Pour in the vegetable broth and bring the stew to a boil.
