Ingredients
- 2 bolondo plantains, peeled and sliced
- 1 cup black beans, cooked
- 1 onion, chopped
- 2 tomatoes, diced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 4 cups vegetable broth
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions, garlic, and red bell pepper. Sauté until the vegetables are soft.
- Stir in the paprika, cumin, and salt. Cook for another 2 minutes.
- Add the tomatoes, bolondo plantains, and black beans. Stir to combine.
- Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes.
- Once the plantains are tender, remove the pot from the heat.
