Ingredients

  • 4 ripe plantains, peeled and sliced
  • 1 cup unsalted peanuts
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cayenne pepper
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the sliced plantains and peanuts to the pot, and stir to combine with the onion and garlic.
  4. Pour in the vegetable broth and bring the soup to a simmer.
  5. Season with cayenne pepper and salt to taste, then cover the pot and let the soup cook for 30-35 minutes, or until the plantains are tender.
  6. Once the plantains are soft, use a potato masher or fork to mash some of the plantains and peanuts in the soup to thicken it.
  7. Simmer for an additional 5 minutes, then remove from heat and serve hot.
