Miondo, also known as Bolondo, is a traditional soup from Equatorial Guinea made with plantains and peanuts. This hearty and flavorful dish is a staple in Equatoguinean cuisine, and it's perfect for a cozy and satisfying meal.
Ingredients
- 4 ripe plantains, peeled and sliced
- 1 cup unsalted peanuts
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon ground cayenne pepper
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced plantains and peanuts to the pot, and stir to combine with the onion and garlic.
- Pour in the vegetable broth and bring the soup to a simmer.
- Season with cayenne pepper and salt to taste, then cover the pot and let the soup cook for 30-35 minutes, or until the plantains are tender.
- Once the plantains are soft, use a potato masher or fork to mash some of the plantains and peanuts in the soup to thicken it.
- Simmer for an additional 5 minutes, then remove from heat and serve hot.
