Miondo Egusi (corn Fufu With Egusi Soup)

Ingredients

  • 2 cups of miondo (fermented corn dough)
  • 1 cup of egusi (ground melon seeds)
  • 1 pound of beef, cut into cubes
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 1 cup of spinach, chopped
  • 2 tablespoons of palm oil
  • 2 tablespoons of ground crayfish
  • 1 teaspoon of ground cayenne pepper
  • Salt to taste

Instructions

  1. Prepare the miondo by mixing the fermented corn dough with water to form a smooth, thick paste. Shape the paste into small balls and set aside.
  2. In a large pot, heat the palm oil over medium heat. Add the chopped onion and cook until translucent.
  3. Add the beef cubes to the pot and cook until browned on all sides.
  4. Stir in the diced tomatoes, sliced bell pepper, and ground crayfish. Cook for 5 minutes.
  5. Add the egusi and cayenne pepper to the pot, then pour in 6 cups of water. Bring to a boil, then reduce the heat and let the soup simmer for 30 minutes.
  6. While the soup is simmering, bring a separate pot of water to a boil. Add the miondo balls and cook for 10-15 minutes, or until they float to the surface.
  7. Stir the chopped spinach into the egusi soup and let it cook for an additional 5 minutes.
  8. Season the soup with salt to taste, then serve the miondo alongside the egusi soup.
