Miondo Koki (koki Pancakes)

Ingredients

  • 2 cups miondo (fermented cassava)
  • 1 cup koki beans, soaked overnight
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup red palm oil
  • 1 teaspoon salt
  • 1 teaspoon ground crayfish
  • 1 teaspoon bouillon powder
  • 1 habanero pepper, finely chopped

Instructions

  1. In a large bowl, combine the miondo, soaked koki beans, chopped onion, diced tomatoes, red palm oil, salt, ground crayfish, bouillon powder, and habanero pepper. Mix well to combine all the ingredients.
  2. Heat a non-stick skillet over medium heat and lightly grease it with palm oil.
  3. Pour a ladleful of the miondo koki mixture onto the skillet to form a pancake shape. Cook for 3-4 minutes on each side until golden brown and cooked through.
  4. Repeat the process with the remaining mixture to make more pancakes.
  5. Transfer the miondo koki pancakes to a serving plate and serve hot.
