Miondo Koki (koki Pancakes)
Miondo Koki, also known as Koki Pancakes, is a traditional Cameroonian dish made from miondo (fermented cassava) and koki beans. This savory and hearty dish is a popular breakfast or snack in Cameroon, and it's packed with flavor and nutrition.
Ingredients
- 2 cups miondo (fermented cassava)
- 1 cup koki beans, soaked overnight
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup red palm oil
- 1 teaspoon salt
- 1 teaspoon ground crayfish
- 1 teaspoon bouillon powder
- 1 habanero pepper, finely chopped
Instructions
- In a large bowl, combine the miondo, soaked koki beans, chopped onion, diced tomatoes, red palm oil, salt, ground crayfish, bouillon powder, and habanero pepper. Mix well to combine all the ingredients.
- Heat a non-stick skillet over medium heat and lightly grease it with palm oil.
- Pour a ladleful of the miondo koki mixture onto the skillet to form a pancake shape. Cook for 3-4 minutes on each side until golden brown and cooked through.
- Repeat the process with the remaining mixture to make more pancakes.
- Transfer the miondo koki pancakes to a serving plate and serve hot.
