Miondo Sauce Tomate (fried Yam With Tomato Sauce)

Ingredients

  • 4 large yams, peeled and sliced
  • 2 cups vegetable oil for frying
  • 1 onion, finely chopped
  • 3 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the yam slices and fry until golden brown and cooked through. Remove from the oil and set aside on a paper towel-lined plate to drain excess oil.
  2. In a separate pan, heat a little oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the chopped tomatoes, paprika, thyme, salt, and pepper to the pan. Cook for about 15 minutes, stirring occasionally, until the tomatoes have broken down and the sauce has thickened.
  4. Serve the fried yam with the tomato sauce on top, and enjoy!
