Miondo Sauce Tomate (fried Yam With Tomato Sauce)

Ingredients
- 4 large yams, peeled and sliced
- 2 cups vegetable oil for frying
- 1 onion, finely chopped
- 3 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the yam slices and fry until golden brown and cooked through. Remove from the oil and set aside on a paper towel-lined plate to drain excess oil.
- In a separate pan, heat a little oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chopped tomatoes, paprika, thyme, salt, and pepper to the pan. Cook for about 15 minutes, stirring occasionally, until the tomatoes have broken down and the sauce has thickened.
- Serve the fried yam with the tomato sauce on top, and enjoy!
