Mirza Ghasemi
Mirza ghasemi is a traditional Persian dish made with grilled eggplant, tomatoes, and eggs. It's a flavorful and comforting dish that is perfect for breakfast or brunch.
Ingredients
- 2 large eggplants
- 4 tomatoes
- 4 eggs
- 1 onion, finely chopped
- 4 cloves of garlic, minced
- 1 teaspoon turmeric
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the grill and roast the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel and chop the flesh.
- Heat some olive oil in a pan and sauté the onions and garlic until golden brown.
- Add the turmeric and chopped tomatoes, and cook until the tomatoes are soft and the mixture is fragrant.
- Add the chopped eggplant and cook for another 5 minutes.
- Make wells in the mixture and crack the eggs into them. Cover and cook until the eggs are set.
- Season with salt and pepper, and serve hot.
