Ingredients

  • 2 large eggplants
  • 4 tomatoes
  • 4 eggs
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the grill and roast the eggplants until the skin is charred and the flesh is soft. Let them cool, then peel and chop the flesh.
  2. Heat some olive oil in a pan and sauté the onions and garlic until golden brown.
  3. Add the turmeric and chopped tomatoes, and cook until the tomatoes are soft and the mixture is fragrant.
  4. Add the chopped eggplant and cook for another 5 minutes.
  5. Make wells in the mixture and crack the eggs into them. Cover and cook until the eggs are set.
  6. Season with salt and pepper, and serve hot.
