Ingredients

  • 1 cup red lentils, rinsed
  • 1 small head of cabbage, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons berbere spice mix
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and sauté until they are soft and translucent.
  3. Add the garlic, ginger, and berbere spice mix. Cook for 2 minutes, stirring constantly.
  4. Add the red lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  5. Add the chopped cabbage and continue to simmer for an additional 15-20 minutes, or until the lentils and cabbage are tender.
  6. Season with salt to taste.
  7. Serve hot and enjoy!
