Misir Kik Wat (ethiopian Spiced Lentil And Cabbage Soup)
Misir Kik Wat is a traditional Ethiopian spiced lentil and cabbage soup that is bursting with flavor. This hearty and nutritious soup is perfect for a cozy night in or for entertaining guests.
Ingredients
- 1 cup red lentils, rinsed
- 1 small head of cabbage, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons berbere spice mix
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions and sauté until they are soft and translucent.
- Add the garlic, ginger, and berbere spice mix. Cook for 2 minutes, stirring constantly.
- Add the red lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the chopped cabbage and continue to simmer for an additional 15-20 minutes, or until the lentils and cabbage are tender.
- Season with salt to taste.
- Serve hot and enjoy!
