Misir Wot (spiced Lentil Stew)

Ingredients

  • 2 cups red lentils, rinsed
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons berbere spice mix
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until soft and translucent.
  2. Add the garlic, berbere spice mix, cumin, coriander, and turmeric. Cook for 2-3 minutes, stirring constantly to prevent burning.
  3. Add the rinsed red lentils and vegetable broth. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-35 minutes, or until the lentils are soft and the stew has thickened.
  5. Season with salt to taste.
  6. Serve the Misir Wot hot with injera bread or rice.
