Misir Wot (spiced Lentil Stew)
Misir Wot is a flavorful and spicy Ethiopian lentil stew that is a staple in Eritrean cuisine. This hearty stew is made with red lentils, onions, garlic, and a blend of aromatic spices, making it a perfect dish for vegetarians and meat-eaters alike.
Ingredients
- 2 cups red lentils, rinsed
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons berbere spice mix
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- Salt to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and sauté until soft and translucent.
- Add the garlic, berbere spice mix, cumin, coriander, and turmeric. Cook for 2-3 minutes, stirring constantly to prevent burning.
- Add the rinsed red lentils and vegetable broth. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-35 minutes, or until the lentils are soft and the stew has thickened.
- Season with salt to taste.
- Serve the Misir Wot hot with injera bread or rice.
