Ingredients

  • 2 cups red lentils, rinsed

  • 1/4 cup berbere spice mix
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and sauté until they are soft and translucent.
  3. Add the garlic and ginger, and cook for another 2 minutes.
  4. Stir in the berbere spice mix and cook for 1 minute to toast the spices.
