Miso Itame (ainu-style Fermented Soybean And Vegetable Stir-fry)
Miso Itame is a traditional Ainu dish that features fermented soybeans and a variety of vegetables stir-fried to perfection. This dish is not only delicious but also packed with nutrients and flavors that represent the unique Ainu cuisine.
Ingredients
- 1/4 cup miso paste
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 cups mixed mushrooms, sliced
- 2 cups bean sprouts
- 1 cup snow peas, trimmed
- 4 cups cooked rice, for serving
Instructions
- In a small bowl, mix the miso paste, soy sauce, and mirin until well combined. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced onion and bell pepper, and stir-fry for 2-3 minutes until slightly softened.
- Add the mixed mushrooms and continue to stir-fry for another 2-3 minutes.
- Next, add the bean sprouts and snow peas, and stir-fry for an additional 2 minutes.
- Pour the miso mixture over the vegetables and toss to coat evenly. Cook for 1-2 minutes until the vegetables are tender-crisp and coated with the miso sauce.
- Remove from heat and serve the Miso Itame over cooked rice.
