Miso Nabe (ainu-style Fermented Soybean And Vegetable Stew)
Miso Nabe is a traditional Ainu-style fermented soybean and vegetable stew that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 1 cup miso paste
- 4 cups dashi broth
- 1 block firm tofu, cubed
- 1 cup napa cabbage, chopped
- 1 cup daikon radish, sliced
- 1 cup shiitake mushrooms, sliced
- 1/2 cup green onions, chopped
Instructions
- In a large nabe pot, combine the miso paste and dashi broth.
- Bring the mixture to a simmer over medium heat.
- Add the tofu, napa cabbage, daikon radish, and shiitake mushrooms to the pot.
- Cover and simmer for 30 minutes, stirring occasionally.
- Add the green onions and simmer for an additional 5 minutes.
- Remove from heat and serve hot.
