Ingredients
- 4 Chinese eggplants
- 1/4 cup miso paste

Instructions
- Preheat the oven to 400°F (200°C).

- In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, sugar, sesame oil, and water. Brush the mixture over the scored eggplants.

- Remove the eggplants from the oven and let them cool slightly. Scoop out the flesh and chop it finely.

- Heat the vegetable oil in a large skillet over medium heat. Add the gyoza in a single layer and cook until the bottoms are golden brown.
- Pour 1/4 cup of water into the skillet and immediately cover with a lid. Steam the gyoza for 3-4 minutes, or until the wrappers are translucent and the filling is cooked through.
