Mixed Greens (Muriwo Mixture) is a popular Zimbabwean dish made with a variety of leafy greens, cooked with onions, tomatoes, and spices. This nutritious and flavorful dish is a staple in Zimbabwean cuisine and is often served with sadza (a maize meal porridge).
Ingredients
- 1 bunch of collard greens, chopped
- 1 bunch of spinach, chopped
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons cooking oil
- 1 teaspoon curry powder
- Salt and pepper to taste
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the diced tomatoes and cook until they soften.
- Stir in the curry powder, salt, and pepper.
- Add the chopped collard greens and spinach to the pot.
- Cover and let the greens cook for about 20-25 minutes, stirring occasionally.
- Once the greens are tender, remove from heat and serve hot.
