Mixed Greens (muriwo Mixture)

Ingredients

  • 1 bunch of collard greens, chopped
  • 1 bunch of spinach, chopped
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons cooking oil
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the diced tomatoes and cook until they soften.
  4. Stir in the curry powder, salt, and pepper.
  5. Add the chopped collard greens and spinach to the pot.
  6. Cover and let the greens cook for about 20-25 minutes, stirring occasionally.
  7. Once the greens are tender, remove from heat and serve hot.
