Mixed Rice With Curry (nasi Kandar)

Ingredients
- 2 cups of white rice
- 1 cup of coconut milk
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1 star anise
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 tomatoes, chopped
- 1 pound of chicken, cut into pieces
- 1 pound of fish, cut into pieces
- 1 cup of mixed vegetables (carrots, peas, and green beans)
- 2 tablespoons of curry powder
- Salt to taste
Instructions
- Rinse the rice and cook it with the coconut milk, cinnamon stick, cardamom pods, cloves, and star anise in a rice cooker.
- While the rice is cooking, heat some oil in a pan and sauté the onion, garlic, and ginger until fragrant.
- Add the tomatoes and cook until they are softened.
- Add the chicken and fish, and cook until they are no longer pink.
- Stir in the curry powder and mixed vegetables, and cook until the vegetables are tender.
- Season with salt to taste.
- Once the rice is cooked, fluff it with a fork and serve it with the curry and side dishes.
