Mixed Seafood Ceviche (ceviche Mixto)

Ingredients

  • 1/2 pound fresh white fish, such as sea bass or flounder, diced
  • 1/2 pound fresh shrimp, peeled and deveined
  • 1/2 pound fresh scallops, tough muscle removed
  • 1 cup fresh lime juice
  • 1 red onion, thinly sliced
  • 1-2 fresh rocoto or habanero peppers, seeded and finely chopped
  • 1-2 fresh aji amarillo (yellow Peruvian chili), seeded and finely chopped
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • 1 sweet potato, boiled and sliced
  • Corn on the cob, boiled and sliced
  • Lettuce leaves for serving

Instructions

  1. In a large glass bowl, combine the diced fish, shrimp, and scallops.
  2. Add the lime juice, making sure the seafood is completely covered. Let it marinate for about 10-15 minutes until the seafood turns opaque.
  3. Add the red onion, rocoto or habanero peppers, aji amarillo, and cilantro. Season with salt and pepper to taste.
  4. Refrigerate the ceviche for another 10-15 minutes to allow the flavors to meld.
  5. Serve the ceviche in individual bowls, garnished with slices of boiled sweet potato and corn on the cob. Use lettuce leaves as a base for the ceviche.
