Mixed Seafood Ceviche (ceviche Mixto)
Mixed Seafood Ceviche, also known as Ceviche Mixto, is a popular dish in Peruvian cuisine. It is a refreshing and flavorful seafood dish that is perfect for a light and healthy meal.
Ingredients
- 1/2 pound fresh white fish, such as sea bass or flounder, diced
- 1/2 pound fresh shrimp, peeled and deveined
- 1/2 pound fresh scallops, tough muscle removed
- 1 cup fresh lime juice
- 1 red onion, thinly sliced
- 1-2 fresh rocoto or habanero peppers, seeded and finely chopped
- 1-2 fresh aji amarillo (yellow Peruvian chili), seeded and finely chopped
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- 1 sweet potato, boiled and sliced
- Corn on the cob, boiled and sliced
- Lettuce leaves for serving
Instructions
- In a large glass bowl, combine the diced fish, shrimp, and scallops.
- Add the lime juice, making sure the seafood is completely covered. Let it marinate for about 10-15 minutes until the seafood turns opaque.
- Add the red onion, rocoto or habanero peppers, aji amarillo, and cilantro. Season with salt and pepper to taste.
- Refrigerate the ceviche for another 10-15 minutes to allow the flavors to meld.
- Serve the ceviche in individual bowls, garnished with slices of boiled sweet potato and corn on the cob. Use lettuce leaves as a base for the ceviche.
