Ingredients

  • 1 cup green peas
  • 1 cup carrots, diced
  • 1 cup green beans, chopped
  • 1 cup cauliflower florets
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated cheese
  • 1 egg
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 burger buns
  • Lettuce, tomato, and condiments for serving

Instructions

  1. In a pot of boiling water, blanch the green peas, carrots, green beans, and cauliflower for 3-4 minutes. Drain and set aside to cool.
  2. In a large bowl, mix the blanched vegetables, onion, garlic, breadcrumbs, grated cheese, egg, paprika, salt, and pepper until well combined.
  3. Divide the mixture into 4 equal portions and shape into burger patties.
  4. Heat a non-stick pan over medium heat and cook the vegetable patties for 4-5 minutes on each side, or until golden brown and cooked through.
  5. Toast the burger buns and assemble the burgers with lettuce, tomato, and your choice of condiments.
