This Mixed Vegetable Burger, also known as Leipziger Allerlei Burger, is a delightful vegetarian option that originated in Hamburg cuisine. Packed with a variety of vegetables, this burger is a healthy and flavorful alternative to traditional meat burgers.
Ingredients
- 1 cup green peas
- 1 cup carrots, diced
- 1 cup green beans, chopped
- 1 cup cauliflower florets
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated cheese
- 1 egg
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 burger buns
- Lettuce, tomato, and condiments for serving
Instructions
- In a pot of boiling water, blanch the green peas, carrots, green beans, and cauliflower for 3-4 minutes. Drain and set aside to cool.
- In a large bowl, mix the blanched vegetables, onion, garlic, breadcrumbs, grated cheese, egg, paprika, salt, and pepper until well combined.
- Divide the mixture into 4 equal portions and shape into burger patties.
- Heat a non-stick pan over medium heat and cook the vegetable patties for 4-5 minutes on each side, or until golden brown and cooked through.
- Toast the burger buns and assemble the burgers with lettuce, tomato, and your choice of condiments.
