Ingredients

  • Assorted vegetables (potatoes, pumpkin, eggplant, beans, carrots) - 2 cups, chopped
  • Mustard oil - 2 tbsp
  • Panch phoron (five-spice blend) - 1 tsp
  • Green chilies - 2, slit
  • Turmeric powder - 1/2 tsp
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Instructions

  1. Heat mustard oil in a pan and add panch phoron. Let it splutter.
  2. Add green chilies and sauté for a minute.
  3. Add the assorted vegetables, turmeric powder, and salt. Mix well.
  4. Cover and cook on medium heat until the vegetables are tender, stirring occasionally.
  5. Garnish with fresh coriander leaves and serve hot with steamed rice.
