Mixed Vegetable Curry (Santula) is a popular dish from Odia Cuisine, known for its flavorful combination of assorted vegetables and aromatic spices.
Ingredients
- Assorted vegetables (potatoes, pumpkin, eggplant, beans, carrots) - 2 cups, chopped
- Mustard oil - 2 tbsp
- Panch phoron (five-spice blend) - 1 tsp
- Green chilies - 2, slit
- Turmeric powder - 1/2 tsp
- Salt - to taste
- Fresh coriander leaves - for garnish
Instructions
- Heat mustard oil in a pan and add panch phoron. Let it splutter.
- Add green chilies and sauté for a minute.
- Add the assorted vegetables, turmeric powder, and salt. Mix well.
- Cover and cook on medium heat until the vegetables are tender, stirring occasionally.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
