Mixed Vegetable Soup (bulanglang)

Ingredients

  • 1 cup malunggay leaves
  • 1 cup squash, sliced
  • 1 cup okra, sliced
  • 1 cup string beans, cut into 2-inch pieces
  • 1 cup eggplant, sliced
  • 1 thumb-sized ginger, sliced
  • 4 cups water
  • Salt to taste

Instructions

  1. Boil water in a pot.
  2. Add ginger and cook for 2 minutes.
  3. Add squash and cook for 3 minutes.
  4. Add okra, string beans, and eggplant. Cook for 5 minutes.
  5. Add malunggay leaves and cook for 2 minutes.
  6. Season with salt to taste.
