Ingredients

  • 2 potatoes, peeled and cubed
  • 1 cup pumpkin, diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup spinach, chopped
  • 1 tomato, chopped
  • 1 onion, sliced
  • 3-4 green chilies, slit
  • 1-inch ginger, grated
  • 4 cups water
  • 1/2 tsp turmeric powder
  • Salt to taste

Instructions

  1. In a large pot, combine all the vegetables, green chilies, ginger, turmeric powder, and water.
  2. Bring the mixture to a boil over medium heat. Then, reduce the heat and simmer for 20-25 minutes or until the vegetables are tender.
  3. Season with salt to taste and simmer for another 5 minutes.
  4. Remove from heat and serve hot.
