Mixed Vegetable Stew (manipuri Kangshoi)
This Mixed Vegetable Stew, also known as Manipuri Kangshoi, is a traditional dish from the North East Indian Cuisine. It is a flavorful and nutritious stew made with a variety of fresh vegetables and aromatic spices.
Ingredients
- 2 potatoes, peeled and cubed
- 1 cup pumpkin, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 cup spinach, chopped
- 1 tomato, chopped
- 1 onion, sliced
- 3-4 green chilies, slit
- 1-inch ginger, grated
- 4 cups water
- 1/2 tsp turmeric powder
- Salt to taste
Instructions
- In a large pot, combine all the vegetables, green chilies, ginger, turmeric powder, and water.
- Bring the mixture to a boil over medium heat. Then, reduce the heat and simmer for 20-25 minutes or until the vegetables are tender.
- Season with salt to taste and simmer for another 5 minutes.
- Remove from heat and serve hot.
