Ingredients
- 1 cup squash, cubed
- 1 cup okra
- 1 cup eggplant, sliced
- 1 cup string beans, cut into 2-inch pieces
- 1 cup bitter melon (ampalaya), sliced
- 1/2 cup tomatoes, sliced
- 1/4 cup shrimp paste (bagoong)
- 2 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons cooking oil
- 2 cups water
Instructions
- Heat oil in a pan over medium heat. Sauté garlic and onion until fragrant.
- Add the tomatoes and cook until softened.
- Add the shrimp paste and cook for 2 minutes.
- Add the squash and water, then cover and simmer for 5 minutes.
- Add the rest of the vegetables and cook for another 5-7 minutes or until the vegetables are tender.
- Transfer to a serving dish and serve hot with steamed rice.
