Ingredients

  • 1 cup squash, cubed
  • 1 cup okra
  • 1 cup eggplant, sliced
  • 1 cup string beans, cut into 2-inch pieces
  • 1 cup bitter melon (ampalaya), sliced
  • 1/2 cup tomatoes, sliced
  • 1/4 cup shrimp paste (bagoong)
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 2 tablespoons cooking oil
  • 2 cups water

Instructions

  1. Heat oil in a pan over medium heat. Sauté garlic and onion until fragrant.
  2. Add the tomatoes and cook until softened.
  3. Add the shrimp paste and cook for 2 minutes.
  4. Add the squash and water, then cover and simmer for 5 minutes.
  5. Add the rest of the vegetables and cook for another 5-7 minutes or until the vegetables are tender.
  6. Transfer to a serving dish and serve hot with steamed rice.
