Miyagi Zunda Mochi is a traditional Japanese sweet made from mochi (glutinous rice cake) and sweet edamame paste. This recipe adds a magical twist to the classic by infusing it with the flavors of Miyagi prefecture in Japan.

Miyagi Zunda Mochi Magic

Ingredients

  • 1 1/2 cups mochiko (glutinous rice flour)
  • 1/2 cup sugar
  • 1 1/4 cups water
  • 1 cup edamame (shelled)
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup kinako (roasted soybean flour)

Instructions

  1. In a microwave-safe bowl, mix mochiko, sugar, and water. Microwave for 3 minutes, then stir. Microwave for an additional 2 minutes until the mixture becomes translucent.
  2. Divide the mochi dough into 12 equal portions and shape them into small balls. Set aside.
  3. In a food processor, blend edamame, sugar, and salt until smooth to make the zunda paste.
  4. Divide the zunda paste into 12 portions and flatten each portion into a disc shape.
  5. Wrap each mochi ball with a disc of zunda paste, covering it completely.
  6. Roll the zunda-covered mochi balls in kinako until evenly coated.
