Ingredients
- 1 cup brown lentils
- 1 cup long-grain white rice
- 2 onions, thinly sliced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10 minutes.
- Add the lentils, rice, cumin, paprika, salt, and pepper to the pot with the caramelized onions. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30-35 minutes, or until the lentils and rice are tender and the liquid is absorbed.
- Fluff the mjaddara with a fork and let it sit for a few minutes before serving.
