Ingredients
- 500g fresh chanterelle mushrooms, cleaned and chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, and sauté until softened.
- Add the chopped chanterelle mushrooms to the pot and cook until they release their liquid and become tender.
- Sprinkle the flour over the mushrooms and stir to coat, then cook for 2-3 minutes to remove the raw flour taste.
- Pour in the vegetable broth, stirring constantly to avoid lumps. Bring the soup to a simmer and cook for 10 minutes.
- Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the soup from heat and use an immersion blender to purée until smooth, or transfer to a blender in batches to purée.
- Return the soup to the pot and reheat if necessary. Serve hot, garnished with fresh parsley.
