Mölln's Mushroom Magic: Creamy Chanterelle Soup

Ingredients

  • 500g fresh chanterelle mushrooms, cleaned and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, and sauté until softened.
  2. Add the chopped chanterelle mushrooms to the pot and cook until they release their liquid and become tender.
  3. Sprinkle the flour over the mushrooms and stir to coat, then cook for 2-3 minutes to remove the raw flour taste.
  4. Pour in the vegetable broth, stirring constantly to avoid lumps. Bring the soup to a simmer and cook for 10 minutes.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Remove the soup from heat and use an immersion blender to purée until smooth, or transfer to a blender in batches to purée.
  7. Return the soup to the pot and reheat if necessary. Serve hot, garnished with fresh parsley.
