Mlyntsi Madness

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 cup mushrooms, sliced
  • 2 tablespoons butter
  • 1/4 cup beef broth

Instructions

  1. In a bowl, whisk together the flour, eggs, milk, and salt to make the crepe batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with oil. Pour a small amount of batter into the skillet, swirling to spread evenly. Cook for 1-2 minutes, then flip and cook for an additional 1 minute. Repeat with the remaining batter to make 8 crepes.
  3. In a separate pan, sauté the onion until translucent. Add the ground beef and cook until browned. Stir in the cooked rice, paprika, and black pepper. Remove from heat.
  4. Divide the meat filling among the crepes, rolling them up and placing them seam side down in a baking dish.
  5. In the same pan used for the meat filling, melt the butter and sauté the mushrooms until golden. Stir in the beef broth and sour cream, then pour the sauce over the filled crepes.
  6. Bake in the oven at 350°F for 20 minutes, or until the sauce is bubbly and the crepes are heated through.
