Ingredients

  • 4 chicken thighs
  • 1 cup shiitake mushrooms, sliced
  • 1 cup wood ear mushrooms, sliced
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 3 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a pot over medium heat. Add ginger, garlic, and green onions. Sauté until fragrant.
  2. Add chicken thighs to the pot and brown on both sides.
  3. Pour in chicken broth, soy sauce, Shaoxing wine, sugar, salt, and white pepper. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
  4. Add shiitake mushrooms and wood ear mushrooms to the pot. Continue to simmer for an additional 15 minutes.
  5. Adjust seasoning if needed. Serve the stewed chicken with mushrooms hot with steamed rice.
