Ingredients
- 4 chicken thighs
- 1 cup shiitake mushrooms, sliced
- 1 cup wood ear mushrooms, sliced
- 3 slices ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 3 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon ground white pepper
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a pot over medium heat. Add ginger, garlic, and green onions. Sauté until fragrant.
- Add chicken thighs to the pot and brown on both sides.
- Pour in chicken broth, soy sauce, Shaoxing wine, sugar, salt, and white pepper. Bring to a boil, then reduce heat to low and simmer for 45 minutes.
- Add shiitake mushrooms and wood ear mushrooms to the pot. Continue to simmer for an additional 15 minutes.
- Adjust seasoning if needed. Serve the stewed chicken with mushrooms hot with steamed rice.
