Ingredients

  • 1 whole duck, cut into pieces
  • 200g shiitake mushrooms, sliced
  • 3 slices ginger
  • 2 scallions, cut into 2-inch pieces
  • 3 tbsp soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a wok over medium heat. Add ginger and scallions, and stir-fry until fragrant.
  2. Add duck pieces and brown on all sides.
  3. Pour in Shaoxing wine, soy sauce, sugar, and salt. Stir well to coat the duck.
  4. Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes.
  5. Add shiitake mushrooms and continue to simmer for another 15 minutes.
  6. Transfer the duck and mushrooms to a serving dish. Boil the sauce until thickened, then pour over the duck and mushrooms.
