Mo Gu Ya (braised Duck With Mushrooms)
Mo Gu Ya, or Braised Duck with Mushrooms, is a classic dish in Huaiyang Cuisine, known for its delicate flavors and tender texture. This dish combines the rich umami of duck with the earthy aroma of mushrooms, creating a satisfying and comforting meal.
Ingredients
- 1 whole duck, cut into pieces
- 200g shiitake mushrooms, sliced
- 3 slices ginger
- 2 scallions, cut into 2-inch pieces
- 3 tbsp soy sauce
- 2 tbsp Shaoxing wine
- 1 tbsp sugar
- 1 tsp salt
- 4 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a wok over medium heat. Add ginger and scallions, and stir-fry until fragrant.
- Add duck pieces and brown on all sides.
- Pour in Shaoxing wine, soy sauce, sugar, and salt. Stir well to coat the duck.
- Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 45 minutes.
- Add shiitake mushrooms and continue to simmer for another 15 minutes.
- Transfer the duck and mushrooms to a serving dish. Boil the sauce until thickened, then pour over the duck and mushrooms.
