Moamoa Kari (coconut Chicken Curry)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 cups coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 2 tomatoes, diced
  • 2 potatoes, peeled and cubed
  • 1 cup chicken broth
  • 2 tablespoons curry powder
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the curry powder and cook for another 2 minutes.
  4. Pour in the coconut milk and chicken broth. Add the diced tomatoes and potatoes. Season with salt and pepper.
  5. Bring the curry to a boil, then reduce the heat and let it simmer for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Serve the Moamoa Kari hot with steamed rice or roti.
