Moamoa Kari (coconut Chicken Curry)
Moamoa Kari, or Coconut Chicken Curry, is a traditional dish from Tuvalu that is rich in flavor and comforting. This dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 kg chicken, cut into pieces
- 2 cups coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, grated
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 1 cup chicken broth
- 2 tablespoons curry powder
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the curry powder and cook for another 2 minutes.
- Pour in the coconut milk and chicken broth. Add the diced tomatoes and potatoes. Season with salt and pepper.
- Bring the curry to a boil, then reduce the heat and let it simmer for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Serve the Moamoa Kari hot with steamed rice or roti.
