Ingredients

  • 1 1/2 cups glutinous rice flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the glutinous rice flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 25 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
