मोदुर पुलाव (Modur Pulao) is a traditional Kashmiri dish that is known for its aromatic flavors and rich taste. This sweet and fragrant rice dish is often served during special occasions and festivals in Kashmir.

Modur Pulao (मोदुर पुलाव)

Ingredients

  • 2 cups basmati rice
  • 1/2 cup ghee (clarified butter)
  • 1 cup mixed dry fruits (cashews, almonds, raisins)
  • 1 cup sugar
  • 4 cups water
  • 1/2 tsp saffron strands
  • 4-5 green cardamom pods
  • 1 inch cinnamon stick

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Heat ghee in a heavy-bottomed pan and fry the mixed dry fruits until they turn golden. Remove and set aside.
  3. In the same pan, add the whole spices (cardamom pods and cinnamon stick) and sauté for a minute.
  4. Drain the soaked rice and add it to the pan. Sauté for a few minutes until the rice turns aromatic.
  5. Add water, saffron strands, and sugar to the rice. Stir gently and bring to a boil.
  6. Reduce the heat, cover the pan, and let the rice cook for 15-20 minutes until it is fully cooked and the water is absorbed.
  7. Once done, fluff the rice with a fork and gently mix in the fried dry fruits.
  8. Serve the Modur Pulao hot and enjoy the delightful flavors of Kashmiri cuisine.
