Modur Pulao (मोदुर पुलाव)
मोदुर पुलाव (Modur Pulao) is a traditional Kashmiri dish that is known for its aromatic flavors and rich taste. This sweet and fragrant rice dish is often served during special occasions and festivals in Kashmir.
Ingredients
- 2 cups basmati rice
- 1/2 cup ghee (clarified butter)
- 1 cup mixed dry fruits (cashews, almonds, raisins)
- 1 cup sugar
- 4 cups water
- 1/2 tsp saffron strands
- 4-5 green cardamom pods
- 1 inch cinnamon stick
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- Heat ghee in a heavy-bottomed pan and fry the mixed dry fruits until they turn golden. Remove and set aside.
- In the same pan, add the whole spices (cardamom pods and cinnamon stick) and sauté for a minute.
- Drain the soaked rice and add it to the pan. Sauté for a few minutes until the rice turns aromatic.
- Add water, saffron strands, and sugar to the rice. Stir gently and bring to a boil.
- Reduce the heat, cover the pan, and let the rice cook for 15-20 minutes until it is fully cooked and the water is absorbed.
- Once done, fluff the rice with a fork and gently mix in the fried dry fruits.
- Serve the Modur Pulao hot and enjoy the delightful flavors of Kashmiri cuisine.
