Ingredients
- 4 green plantains
- 1 pound shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 1 teaspoon dried oregano
- 1/2 cup chicken broth
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Peel the plantains and cut them into chunks. Fry the plantain chunks in hot oil until golden and crispy. Drain on paper towels and set aside.
- In a separate pan, heat olive oil over medium heat. Add the garlic, onion, and bell pepper, and sauté until softened.
- Add the shrimp to the pan and cook until pink and opaque.
- Transfer the fried plantains to a mortar and pestle or a large bowl. Mash the plantains with a pinch of salt and pepper until smooth.
- Divide the mashed plantains into individual servings and shape them into small bowls.
- Spoon the shrimp and vegetable mixture over the mashed plantains.
- Serve the Mofongo de Camarones hot and enjoy!
