Mofongo De Camarones (shrimp Mofongo)

Ingredients

  • 4 green plantains
  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon dried oregano
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Peel the plantains and cut them into chunks. Fry the plantain chunks in hot oil until golden and crispy. Drain on paper towels and set aside.
  2. In a separate pan, heat olive oil over medium heat. Add the garlic, onion, and bell pepper, and sauté until softened.
  3. Add the shrimp to the pan and cook until pink and opaque.
  4. Transfer the fried plantains to a mortar and pestle or a large bowl. Mash the plantains with a pinch of salt and pepper until smooth.
  5. Divide the mashed plantains into individual servings and shape them into small bowls.
  6. Spoon the shrimp and vegetable mixture over the mashed plantains.
  7. Serve the Mofongo de Camarones hot and enjoy!
