Mogodu Magic
Mogodu Magic is a traditional Botswana dish that is loved for its rich flavors and hearty ingredients. This slow-cooked stew is perfect for a comforting meal on a chilly evening.
Ingredients
- 500g beef tripe, cleaned and cut into bite-sized pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 2 cups beef stock
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and cook until softened.
- Add the beef tripe to the pot and brown on all sides.
- Stir in the tomatoes, potatoes, and carrots. Pour in the beef stock and season with paprika, ground coriander, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the tripe is tender.
- Serve the Mogodu stew hot, with a side of pap or rice.
