Mogodu Magic

Ingredients

  • 500g beef tripe, cleaned and cut into bite-sized pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 2 cups beef stock
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and cook until softened.
  2. Add the beef tripe to the pot and brown on all sides.
  3. Stir in the tomatoes, potatoes, and carrots. Pour in the beef stock and season with paprika, ground coriander, salt, and pepper.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the tripe is tender.
  5. Serve the Mogodu stew hot, with a side of pap or rice.
