Moi Moi Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup of moi moi batter
  • 1 small onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1/2 cup of cooked shredded chicken (optional)
  • 1/4 cup of vegetable oil
  • 1 teaspoon of curry powder
  • 1 teaspoon of thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix the moi moi batter, chopped onion, red bell pepper, green bell pepper, shredded chicken (if using), vegetable oil, curry powder, thyme, salt, and pepper.
  4. Stuff the bell peppers with the moi moi mixture and place them in a baking dish.
  5. Bake for 30 minutes or until the bell peppers are tender.
