Moi Moi Stuffed Bell Peppers
Moi Moi Stuffed Bell Peppers is a delicious Nigerian dish that combines the flavors of moi moi (steamed bean pudding) with the vibrant colors and flavors of bell peppers.
Ingredients
- 4 large bell peppers
- 1 cup of moi moi batter
- 1 small onion, finely chopped
- 1 small red bell pepper, finely chopped
- 1 small green bell pepper, finely chopped
- 1/2 cup of cooked shredded chicken (optional)
- 1/4 cup of vegetable oil
- 1 teaspoon of curry powder
- 1 teaspoon of thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a bowl, mix the moi moi batter, chopped onion, red bell pepper, green bell pepper, shredded chicken (if using), vegetable oil, curry powder, thyme, salt, and pepper.
- Stuff the bell peppers with the moi moi mixture and place them in a baking dish.
- Bake for 30 minutes or until the bell peppers are tender.
