Ingredients
- 4 large potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- 1/2 cup grated cheese
- 1/4 cup chopped chives
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- 2 tablespoons vegetable oil
Instructions
- Boil the potatoes in a pot of salted water until tender, then drain and mash them.
- Stir in the milk, butter, cheese, chives, salt, and pepper. Mix until well combined.
- Shape the mashed potatoes into small cakes, then dip each cake into the beaten eggs and coat with breadcrumbs.
- Heat the vegetable oil in a pan over medium heat, then fry the potato cakes until golden brown on both sides.
- Remove the potato cakes from the pan and place them on a paper towel to drain excess oil.
