Mokoenya Mashed Potato Cakes

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/2 cup grated cheese
  • 1/4 cup chopped chives
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil

Instructions

  1. Boil the potatoes in a pot of salted water until tender, then drain and mash them.
  2. Stir in the milk, butter, cheese, chives, salt, and pepper. Mix until well combined.
  3. Shape the mashed potatoes into small cakes, then dip each cake into the beaten eggs and coat with breadcrumbs.
  4. Heat the vegetable oil in a pan over medium heat, then fry the potato cakes until golden brown on both sides.
  5. Remove the potato cakes from the pan and place them on a paper towel to drain excess oil.
