Ingredients

  • 2 lbs chicken thighs, bone-in
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp soy sauce
  • 2 cups mixed vegetables (bell peppers, carrots, green beans)
  • 2 cups cooked rice
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, ground cumin, ground turmeric, and ground coriander.
  2. Heat a large pot over medium heat and brown the chicken thighs on both sides. Remove and set aside.
  3. In the same pot, sauté the chopped onion and minced garlic until fragrant.
  4. Stir in the mixed vegetables and soy sauce, then add the browned chicken thighs back to the pot.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 30-35 minutes, or until the chicken is tender.
  6. Serve the chicken moksi meti over cooked rice and enjoy!
