Moksi Meti (chicken Moksi Meti)
Moksi Meti, also known as Chicken Moksi Meti, is a popular dish in Surinamese cuisine that features a flavorful combination of chicken and mixed vegetables. This dish is a delicious representation of the diverse culinary influences in Suriname, including Javanese, Chinese, and East Indian flavors.
Ingredients
- 2 lbs chicken thighs, bone-in
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp soy sauce
- 2 cups mixed vegetables (bell peppers, carrots, green beans)
- 2 cups cooked rice
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, ground cumin, ground turmeric, and ground coriander.
- Heat a large pot over medium heat and brown the chicken thighs on both sides. Remove and set aside.
- In the same pot, sauté the chopped onion and minced garlic until fragrant.
- Stir in the mixed vegetables and soy sauce, then add the browned chicken thighs back to the pot.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 30-35 minutes, or until the chicken is tender.
- Serve the chicken moksi meti over cooked rice and enjoy!
