Ingredients
- 1.5 lbs beef stew meat, cut into cubes
- 1 cup smooth peanut butter
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, chopped
- 1 cup beef broth
- 1/2 cup tomato paste
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups cooked white rice, for serving
Instructions
- Season the beef with salt and pepper.
- In a large pot, heat the vegetable oil over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for an additional minute.
- Stir in the peanut butter, tomato paste, and cayenne pepper until well combined.
- Return the browned beef to the pot and add the chopped tomatoes and beef broth. Stir to combine.
- Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1 hour, or until the beef is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the beef and peanut stew over cooked white rice.
