Ingredients

  • 1 cup beef broth
  • 1/2 cup tomato paste
  • 1/2 tsp cayenne pepper

  • 2 tbsp vegetable oil
  • 2 cups cooked white rice, for serving

Instructions

  1. Season the beef with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for an additional minute.
  4. Stir in the peanut butter, tomato paste, and cayenne pepper until well combined.
  5. Return the browned beef to the pot and add the chopped tomatoes and beef broth. Stir to combine.
  6. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1 hour, or until the beef is tender.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the beef and peanut stew over cooked white rice.
