Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 cup creamy peanut butter
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1/4 cup chopped cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions and garlic until softened.
- Stir in the peanut butter, ground ginger, paprika, and cayenne pepper until well combined.
- Return the chicken to the pot and pour in the chicken broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
- Adjust the seasoning if needed and serve the stew hot, garnished with chopped cilantro.
