Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 cup creamy peanut butter
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 1/4 cup chopped cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, sauté the onions and garlic until softened.
  3. Stir in the peanut butter, ground ginger, paprika, and cayenne pepper until well combined.
  4. Return the chicken to the pot and pour in the chicken broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Adjust the seasoning if needed and serve the stew hot, garnished with chopped cilantro.
